Mock Oatmeal

This is a fast, easy "mock" oatmeal, but just as tasty!

Hemp hearts have a mild earthy flavor, like oats do, but not the same flavor as oats. The success of this oatmeal lies in the balance of salt to sweet, and added fat.  

Optional, collagen is added to boost protein content, and as a supplement for healthy skin and hair. 

If you don't have chia seeds increase hemp hearts by the amount of one or the other being omitted. 

Customize your oatmeal with berries, flavored extracts, spices, and/or nuts.  I like LorAn extracts, found in the baking aisle of some stores, in the cake/candy making aisle at craft stores, baking specialty supply stores, and online. If you buy the super concentrated tiny bottles, only use a couple of drops at a time! McCormick is a long time trusted brand found in the baking aisle of grocery stores. Mapleine maple extract is, hands down, the absolute best maple extract on the market. 

Basic Oatmeal: 
1/4 cup hemp hearts
1 Tbsp pumpkin seeds, ground (optional)
1/2 Tbsp chia seeds
1 Tbsp granulated allulose
pinch salt
1 Tbsp powdered, unflavored, unsweetened collagen (optional)
1/4 cup unsweetened almond milk
1/4 cup heavy cream OR 1 Tbsp butter

Stir all the dry ingredients together in a bowl or saucepan. Add the wet ingredients and optional add ins. Mix. Heat through. Serve immediately. Makes 1 serving. 

Maple Nut: 
1/4 cup walnuts or pecans, toasted
1 Tbsp Mapleine maple extract. 

Chop the nuts and toast in a dry skillet over medium heat until fragrant. Stir a couple of times. Takes only 3 to 5 minutes. Watch them so they don't burn. 

Berry Bonanza: 
1/4 cup raspberries, strawberries, blueberries, or blackberries

Add fresh or frozen berries to the basic recipe.  Use one kind or a combo. Some people add frozen berries after heating the oatmeal so they stay more intact. Others add fresh or frozen berries before heating so they mash up into the dish easier. You could add a teaspoon of flavoring extract, like strawberry or raspberry to enhance the flavor. 

Peanut Butter Banana: 
1/4 cup unsweetened natural peanut butter (substitute for the cream in basic recipe) 
1 tsp banana flavoring extract

Use peanut butter in place of the cream or butter in the basic recipe. Make sure the peanut butter you buy does not have added sugar. A surprising amount of them do!  I'm personally like Adam's no stir, but Costco has one, as do most brands. 

If you're looking for banana chunk texture, you could use small cubes of ripe avocado, or zucchini. The avocado is closer in texture, but has a little flavor, while the zucchini is virtually tasteless on it's own. 

Apple Cinnamon: 
1 Tbsp zucchini or chayote
1 tsp apple extract
1/2 tsp ground cinnamon

Peel, seed, finely dice, and steam zucchini in the microwave or in a saute pan, until soft. Add all ingredients to the basic recipe. Serve immediately. 
People say chayote has a similar texture to cooked apples when it's been cooked, but I've never tried it.
