I originally saw this on the Keto Twins YouTube channel. They saw it on Tik Tok. I don't usually love tomato soup, but I really like this one. Bonus...it's super easy!
I've also added a recipe for easy tomato soup using a large can of crushed tomatoes as the base.
Tomato Soup (from store bought sauce)
24 oz jar Rao's Tomato Basil sauce
1 cup water or chicken broth
3/4 cup heavy cream
Empty Rao's straight into a saucepan if you want slightly chunky soup.
If you want a smooth soup, blend well in a blender, then pour into a saucepan.
Add the water or broth, and cream. Heat on medium, stirring occasionally, until heated through. Serve immediately. Excellent with chaffles.
Tomato Soup (from canned tomatoes)
28 oz can crushed tomatoes
1 bay leaf
2-3 Tbsp dehydrated minced onion, or 1/4 fresh onion, chopped
1 Tbsp dehydrated celery, or 2 stalks celery, chopped (optional)
1 Tbsp garlic powder, or 2 cloves fresh garlic, chopped
1 Tbsp Italian seasoning
salt and pepper to taste
1 tsp butter or oil (if using fresh vegetables)
heavy cream
1a. If using dehydrated vegetables, add all ingredients to a soup pan, and stir. Cover and simmer 30 minutes, stirring occasionally.
1b. If using fresh vegetables, rough chop. Heat the butter or oil in the soup pan. Add the onion and celery. Cook on medium low until the onions start to change color. Add the garlic. Cook a minute, stirring. Add the tomatoes and seasonings. Cover and simmer 30 minutes stirring occasionally.
2. Transfer soup to a blender and blend until smooth.
3. Dish up soup and add cream, to taste. Stir. Serve.
Excellent with chaffles.
