Pumpkin Bread

 This is my quick bread for holidays when I don't feel like making a pie. Makes 2 gluten free / sugar free loaves. The loaves will be shorter and denser than quick breads with gluten. 

If you just want gf, but don't care about sugar, sub regular white & brown sugar 1 for 1.
Add the spices you like in your pumpkin pie. I don't care for cloves or allspice so they're not in this recipe, but both are traditional for pumpkin pie.

 

Pumpkin Bread

DRY:
2 cups gluten-free flour (I use King Arthur 1:1 measure)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp unflavored gelatin or xanthan gum
1 tsp cinnamon
1/2 tsp fresh grated nutmeg, or 1 tsp ground nutmeg
1/4 tsp ground cardamom 
1/4 tsp ground ginger

WET:
1 1/2 cups allulose
1/2 cup Swerve brown sugar
2 eggs, room temperature
1 15-oz can 100% pumpkin (not pumpkin pie filling)
3/4 cup sour cream

OPTIONAL additions, 1 cup, or measure with your heart. (use one or two, but not all in the same batch)
chocolate chips
butterscotch chips
white chocolate chips
chopped toasted nuts (I like walnuts or pecans)
chopped toasted seeds (pumpkin or sunflower)

1. Preheat oven to 325 and move the oven rack up one notch from center.  Allulose makes baked goods brown faster than sugar. Baking higher in the oven at a lower temperature will prevent overbrowning the outside before the inside is done. (If using regular sugar, bake on the center rack at 350 for 70 minutes)

2. Sift the dry ingredients together and stir well in a medium bowl. 

3. In a separate bowl, sift the allulose and brown sugar together, removing clumps. Add the 2 eggs and cream together. Add the pumpkin and sour cream and mix well. 

4. Pour half the dry ingredients into the wet and mix just until combined. Pour in the rest and mix just until combined. 

5. Fold in optional ingredients. 

6. Lightly grease 2 loaf pans. Pour half the batter into each. Bake for 70 minutes, or until a toothpick comes out clean. Let cool in the pan for 10 minutes to set, then turn out on a cookie sheet to cool completely.
