Sausage & Cheese Meatballs:
1 lb breakfast sausage, uncooked
2 cups cheddar cheese, or a combination of cheeses, grated
4 oz cream cheese
1 egg
1 cup almond flour
1 tsp baking powder
1 tsp garlic powder
Preheat oven to 350 degrees. Soften cream cheese in the microwave for 20-30 seconds. Grate cheese.
Mix all ingredients together. I like a stand mixer for this. Add a tsp of water if the mixture is too dry. Lay foil on a cookie sheet. Spray generously with cooking spray. Use a spoon or cookie scoop to form uniform 1" balls. Place close together, but not touching. Bake 25 minutes, or until cooked through.
Makes about 48 small meatballs.
