7 Layer Salad

I omitted the peas from the traditional salad recipe to reduce carbs.
7 Layer Salad:
6 cups (1 medium head) iceberg lettuce
1 cup cheddar cheese
3 large celery stalks
1 cup red bell pepper
4 green onions
1 cup bacon bits OR 1 lb bacon, cooked & crumbled
3 hard boiled eggs

1 cup mayonnaise
1/4 tsp garlic powder
1 tsp apple cider vinegar
1/8 tsp ground black pepper

Chop all the vegetables, and cook the bacon. 
Mix the Mayo, garlic powder, vinegar, and pepper together in a bowl. 
Layer the veggies in a clear glass bowl, with lettuce on the bottom, then bell pepper,
celery, onion, boiled eggs, and most of the bacon.
Spread all the dressing on the top. 
Add cheese, and sprinkle with remaining bacon. 
Refrigerate overnight, tightly covered.
Serves 8
3 net carbs per serving
