This recipe uses leftover roast beef, which makes it super quick to put together! BBQ Beef Sandwiches
1 to 2 cups cooked roast beef
2 to 4 low carb hamburger buns (homemade, or Franz Bakery makes a decent keto bun)
1 bottle your favorite low carb BBQ sauce. I like G. Hughes Sugar Free Original or Sweet & Spicy.
2 Tbsp butter
Shred beef with a fork, or use the paddle attachment on a Kitchen Aid mixer...super quick for large batches. Butter the inside of the buns and brown, face down, in a medium hot skillet. Watch these! Keto breads go from browned to burned very quickly. Pour sauce over beef and heat in a microwave. Serve with dill pickles, or keto friendly coleslaw.
