Bacon & Cabbage

This is a super simple, yet tasty, skillet or oven baked meal. If I'm only making one or two servings I'll whip this up in the skillet, but it's amazing as leftovers. In that case get one large or two medium heads and a pound of bacon to roast all at once. This is probably my favorite keto comfort food. 
Bacon & Cabbage (Stove Top)
5 or 6 strips of bacon (don't use peppered it will be too spicy)
1/2 head green cabbage
1 tsp dehydrated onion, or 1 Tbsp fresh onion, minced
salt & pepper to taste

Chop the bacon into pieces, about 1/4" to 1/2". Saute in a skillet on medium heat until almost browned. Remove the core from 1/2 a head of cabbage. Thinly slice remaining cabbage. Leave at least 1 tsp of bacon grease in the pan. Remove excess, if you wish. Add onion and saute 1 or 2 minutes. Add cabbage to the pan, stirring after each handful added. Cover, turn heat to low and cook 5-10 minutes more, or until the cabbage is just soft, but not soggy. Cook less for crunchier cabbage. Salt and pepper to taste. Serve hot. Makes 3-4 servings.

Bacon & Cabbage (Oven Roasted)
1 lb bacon, regular cut not thick cut
1 large, or 2 medium heads green cabbage
1 small yellow onion (optional)
4 carrots (optional) 
salt & pepper to taste

Preheat oven to 450 degrees. Use pan spray on a 1/2 sheet pan, or one or two roasting pans/cake pans, Pull the outer leaves off the cabbage and discard. Cut the cabbage in half from the top down through the core. Cut a triangle shape just outside the core and remove from each cabbage half. Discard the core. Cut the cabbage into 8-12 wedges. Place on the sheet pan. Peel the onion, cut into wedges, and place in between the cabbage. Peel the carrots. Cut into roughly equal size chunks about 2" long. Place in open spaces on the pan. Salt and pepper the vegetables. Lay the bacon strips over the vegetables. Bake 20 minutes. If the bacon is crisp, remove to a plate. Flip the cabbage wedges over and stir the smaller vegetables. Continue cooking the vegetables until tender, about 10-20 more minutes. Crumble the bacon over the top to serve. Serve hot. Makes 8-12 servings.
