Hush Puppies

 These hush puppies hit the spot. Now, they're not as amazing as good ol southern hush puppies made with fresh ground corn meal, BUT for my keto life they're fantastic!  Adapted from Keto Is Life's original recipe. 


Hush Puppies:
1 cup almond flour
1 Tbsp oat fiber or coconut flour
1 tsp baking powder
1/2 tsp salt
2 or 3 tsp onion powder, or 1/4 cup finely chopped onions
1 egg
1/4 cup liquid (choose 1) 
1. liquid = unsweetened almond milk + 1 Tbsp of additional almond flour or nutritional yeast. 
(this is what I use...1/4 c = 0.14 net carbs)
OR 
2. liquid = heavy whipping cream (used in original recipe...1/4 c = 0.8 net carbs)
OR 
3. liquid = buttermilk (used in traditional hush puppies...1/4 c = 3 net carbs)

Avocado oil or lard for frying, or air fryer

OIL: Attach a candy thermometer to a Dutch oven or other large heavy pot, then pour in 3 inches of oil and set over medium-high heat. Heat the oil to 350-375 degrees.  (see air fryer instructions below)

In a medium-sized bowl, stir together the almond flour, oat fiber, baking powder, salt, onions or onion powder, (and 1 Tbsp almond flour or nutritional yeast if using almond milk). Stir in the egg and liquid until blended. Do not overmix.

OIL: Use a medium sized cookie scoop. Drop the dough into your hand and form a ball. Gently drop the batter into the oil. If the hush puppies stick to the bottom when first dropped in, gently push sideways from the bottom with tongs to loosen. They'll float to the top to continue cooking. Cook 5 or 6 at a time. Fry for 6-8 minutes, depending on the size, until they're golden brown, turning them once in a while to brown evenly.
 
Remove hushpuppies from the oil and place on a baking rack to drain. 

Air Fryer: Refrigerate batter uncovered for 10 minutes while the air fryer is preheating. Preheat air fryer and fry basket to 400°F for 10 minutes. Remove fry basket; carefully line with aluminum foil, and lightly coat foil with cooking spray. Working in 2 batches, scoop half of chilled batter by heaping tablespoonfuls into prepared basket, spacing hush puppies about ¼-inch apart. Lightly spray tops with cooking spray. Cook in preheated air fryer until puffed and golden brown, about 8 minutes.

Serve hot with dipping sauce of your choice.

My go to dipping sauce is allulose sweetener at the bottom of a small dish topped with malt vinegar. Swirl the hushpuppy in the sugar/vinegar solution for a few seconds. YUM!
