Pasta

 This pasta recipe comes from Cook With Mel on YouTube. This one is the almond flour version, but she has coconut flour, and no flour versions, as well. It holds up well to sauces. 

Easy Keto Pasta: 
3 eggs, room temperature (don't skip this step)
1 1/4 tsp olive oil 
60g cream cheese, softened (don't skip this step)
4 Tbsp almond flour
1/2 tsp nutritional yeast
pinch salt
1 tsp gelatin powder
 
Preheat oven to 285 degrees. Place a silicone baking mat into a half sheet or other pan with sides. Add liquid ingredients to a bullet or regular blender. Add the dry ingredients, with the gelatin powder going in last. Shake the blender bottle a couple of times, then blend for 10 seconds. Shake again, and blend another 10 to 20 seconds, or until all ingredients are incorporated thoroughly without lumps. Pour into the center of the silicone mat. Use spatula to spread evenly across the mat, until it's even, but not thin enough to see the mat peek through. Bake 10 minutes. Check doneness by touching the center. It should be slightly sticky, but solid. It's done. Remove from the oven. Let cool. Cut into desired shape.

To serve: Heat sauce first. Add pasta and stir. Pasta is already cooked. It only needs to be warmed.
To store: keep in the fridge for up to 3 days, or freeze.
