Breakfast Casseroles

In the oven, or in the air fryer, these are easy to make for a crowd! 
Air Fryer Frittata....Heidi's recipe:
Note: substitute vegetables for what you have on hand, either cooked or raw. If using dehydrated vegetables, place 1 tsp each in a medium bowl. Add enough water to just cover. Microwave 1 minute. Let sit while the sausage cooks.  

12 oz raw sausage links (about 14) OR *ground cooked sausage
2 Tbsp celery 
2 Tbsp bell pepper
2 Tbsp onion, chopped fine
4 eggs
1 tsp cream or milk
1/4 cup cheese, grated

Lay sausage links in a single layer in the airfryer basket. Cook at 350° for 15 minutes, shaking once or twice to cook evenly.  Place hot links in a silicone baking pan that fits in the airfryer.  *If using ground sausage, cook on the stovetop first. Cover the bottom of the silicone baking pan. Mix vegetables, eggs, cream, and cheese together. Pour evenly over the sausage. Cook at 350° for 15 minutes, or until the eggs are set.  

Gene & Marty casserole: 
24 small breakfast sausage links
1/2 lb bacon
12 eggs
3/4 cup heavy cream
1/4 onion, optional
1/2 bell pepper, optional
12 cherry or grape tomatoes, optional
1 cup grated sharp cheddar cheese
1/4 cup feta cheese, optional
salt
pepper
1 tsp ground celery powder, optional (I buy dehydrated celery and grind it myself to make celery powder without salt.)
pinch cayenne pepper
  • Lay bacon on a rack over a cookie sheet and place in the cold oven. Turn oven on to 450°. Bake 20-30 minutes or until crisp tender. Remove from oven and let cool until needed. Turn oven down to 350°.
  • Brown sausage, but don't cook through. Dice the onion and bell pepper. Quarter the tomatoes. Drain the sausage. Add onion, bell pepper, and tomatoes to the pan and cook until the onion is translucent.
  • Grease a 9 x 13“ pan.
  • Layer the sausage in a single layer in the bottom of the pan.
  • Add the vegetables and bacon to the bottom of casserole. Sprinkle with 1/2 cup of the grated cheese, and the feta cheese.
  • Whisk eggs, heavy cream, and seasonings in a large bowl.
  • Pour over the top. Add remaining grated cheese.
  • Bake for 35 to 40 minutes, or until a knife inserted comes out clean.
Serves 12

  • 1 lb ground beef cooked; seasoned
  • 1/2 cup crumbled bacon
  • 6 eggs large
  • 1/2 cup heavy cream
  • 2 TB cream cheese softened
  • 8 oz cheese shredded
  • 1 TB salt
  • 1 TB pepper
  • 2 tsp all purpose herbal seasoning

Instructions

  • Preheat oven to 350 degrees. Grease a 9 or 10 inch pie dish.
  • Brown ground beef until cooked. Cook or reheated crumbled bacon
  • In a blender or using a whisk, combine eggs, cream cheese, heavy cream, and seasonings until well combined.
  • Add meats to bottom of pie dish. Pour egg mixture evenly over. Add cheese evenly over casserole. Bake 30 minutes until egg is cooked. Let sit 15 minutes before serving.
