"Buttermilk" Marinade

 I used to marinate my chicken in buttermilk or a milk/lemon juice mixture pre-keto.  However, while commercial buttermilk is not too high in carbs, it's outrageously expensive!  This is my keto-fied mixture for tender, juicy chicken...whether it's breaded and fried, baked, air fried, or sauted. 

You can use 1 cup of milk instead of the milk/sour cream combo. The sour cream gives it more of a buttermilk taste and texture. 

Buttermilk Substitute:

3/4 cup milk (real milk, nut milk, coconut milk, etc)
1/4 cup full fat sour cream
2 Tbsp lemon juice (fresh or from a bottle)
salt & pepper 

Mix all ingredients together in a zip top bag, or bowl. Add thawed chicken and coat well. At this stage it can be parceled out into food saver or zip top bags and frozen with the marinade, or set in the fridge at least 1 hour, or overnight to marinate before cooking. Overnight is best to give the acids and salt time to tenderize the meat. Cook using your preferred recipe.
